When you’re too focused on dieting, at some point in time, you’ll start craving after those things you had deprived yourself of eating, especially if you’re of the school of thought that believes a particular food group should be knocked off completely in other to achieve weight lose goals.
Whether your aim is to lose weight or to maintain a healthy eating habit, it’s important that you follow sustainable meal plans. In our article “Eat This Way and Loose Weight“, we were advised to eat from all groups of food.
On our menu today, we have Whole Wheat Spaghetti in Coconut Curry Sauce, garnished with Veggies, Boiled Egg, diced Salmon Fish, Shrimps and Chicken. This meal was prepared by – Hammie Holawale (Mom JJ’s Kitchen).
To prepare the Coconut Curry Sauce, you’ll need:
Shrimps or fish or chicken or meat
Scotch Bonnet (Rodo)
Coconut milk (Grate or blend your coconut and squeeze out the milk)
Extra Virgin oil
Mix veggies (Optional)
* Step 1: Marinate (shrimps or fish or chicken) with pinch of salt , seasoning cubes, 1 tbsp of scotch bonnet and 1tbsp of sliced parsley for at least 30mins.
* Step 2: Heat up 1 tbsp of Extra Virgin Oil on medium heat, add chopped 1 tbsp of garlic and onion and stir. Add 2tbsp of curry and stir for few sec; add marinated shrimps or fish or chicken above, continue stirring for 1min.
* Step 3: Add mix Veggies – (e.g Broccoli, Cauliflower, Mushroom, Carrot or whatever veggies you can afford within your locality) and stir all for another 1min.
* Step 4: Add half tin of coconut milk or more, stir and allow to cook for 2-3mins, garnish with 1tbsp of parsley, and let it simmer for few secs before turning off heat. It’s ready!
Enjoy it with Rice or Bulgur Wheat or Whole Wheat Spaghetti and add your boiled egg.
